Pier's Wet Fish Recipes and more............
![]() ![]() This thread is for my favourite and easy recipes for you to all try If you want to post your favourites please do and if anyone tries the recipes would love to know how you enjoyed them First is my easy FISH PIE fresh fish like cod is good onion, thinly sliced clove garlic, peeled and chopped tomatoes zucchini salt and black pepper Quanities to everyones taste Lightly oil baking dish. Arrange cod in dish with the thicker parts to the outside. Place onion and garlic over cod. Top with tomato slices arranged alternately with zucchini slices. Brush with oil Bake for 20 minutes or until fish flakes when tested with fork. Sprinkle salt, pepper on top before serving for those that love cheese ..grated cheese on top is an option as well Great to serve with crusty bread and lemon slices good lunch dish to impress your friends better than a sandwich and more healthy Last edited by Pier; 12-13-2008 at 05:54 PM. |

FISH CAKES
fish fillets or you can used tin tuna or salmon with this I use a large tin 3 medium potatoes 1 cup bread crumbs chopped fresh parsley garlic clove finely chopped salt and pepper to your taste 2 eggs, lightly beaten oil for frying 1 Boil and mash the potatoes, set them aside. 2 Boil the codfish until it flakes easkly. Drain and flake the fish with a fork. Be sure to remove all bones. 3 Mix the flaked fish, the potatoes and the rest of the ingredients together well by hand. If the mixture is too crumbly, add another egg. If too sticky, add some more bread crumbs. 4 Form the mixture into cakes and fry them on medium high heat in a skillet coated with oil. great served with a salad and bread good if you have any leftover potatoes |

CRUMBED FISH
Instead of bread crumbs use crushed cornflakes Lightly season fish fillets with sea salt Dust the fish with flour ( any herbs could be added to the flour I use lemon pepper) Dip into beaten egg Place into the crumbs and pat the crumbs on firmly Hint here do them and put in fridge at least an hour or more before frying (even if you use bread crumbs) helps the crumbs to stay on |

ooh, I'm lovin these, more more more!!
here's one for the holidays: Hot Spiced Tea 1/4 tsp ground cloves 1/4 tsp nutmeg 1 tsp ground cinnamon 1 cup sugar 1 pkg lemonaide koolaide mix (unsweetened) 1 3/4 cups instant orange breakfast drink 3/4 cup instant tea (no sugar added) Mix all ingredients together. Store an any airtight container. To serve, use 2 heaping tsps of mix in a cup of boiling water (3 for a mug). Or to taste

![]() ![]() MY LOVE'S FAMOUS SCONES 600 g (4 cups) of self raising flour ( only use self raising) pinch of salt 300 mls of cream (1 and a quarter cups) 300 mls of water ( ditto ) preheat oven to hot 220C mix all to a dough and cut into rounds if you have a cutter or squares brush tops with milk and bake for approx 15 minutes or until brown slice in half ...serve with jam and cream Hint: The secret of good scones is not to have the mixture too dry and not to handle the dough to much. Wrapping scones in a tea towel after baking helps to keep them moist Hint : these are good to freeze and zap a few seconds when needed if that unexpected visitor arrives Last edited by Pier; 12-13-2008 at 05:53 PM. |

![]() My easy meatloaf 1 and a half a pound of ground beef (this depends on size of your meat loaf tin and is flexible) ...you can use any ground meat like sausage meat 1 tablespoon Worcestershire sauce chopped medium size onion half a cup of broken up bread slices now you can add half a cup of any chopped up vegetables like mushrooms 1 large egg (if mixture too dry and not binding add another egg) garlic salt and pepper Mix all together and place in meatloaf tin pour over some BBQ sauce cook until cooked right through in a medium oven about an hour and a half hint leave in tin for 10 minutes before slicing...great cold with a salad |
